Production Area: Grapes coming from the best selections of clones and from the oldest vineyards in the municipality of Acerenza, at 600 m above sea level
Winemaking: selection of the grapes with a double sorting table in order to eliminate all the vegetal components deriving from the bunch. Soft crushing and destemming and vinification in wooden vats with maceration for approximately 25-30 days, carrying out manual punching down every 6 hours. Aging: 24 months in new barriques, where malolactic fermentation takes place. Subsequent maturation period.
Idea of the Wine: wine for expert consumers looking for unique flavors Sensory Characteristics: Poured into the glass, Aglianico del Vulture shines in its intense ruby red color, the nose is broad and complex, with fruity notes and hints of spices. There are also evident references to cherry, fruit jam, currant, tobacco, cinnamon, vanilla and rosemary. The flavour, dry and warm, reflects the odorous sensations and highlights the structure of these grapes which offer an excellent aromatic persistence. What is striking about this wine is its strong personality and predisposition to improve with ageing.
Food pairings: It is excellent paired with tasty mixed grills, baked lasagna with meat sauce, beef fillet with a side of porcini mushrooms, truffle risotto, game and game. Aglianico is also perfect for pairing with appetizers based on sliced cured meats, well-matured and tasty cheeses such as Caciocavallo Lucano.
