Production Area: Salento (Puglia)

Vinification: Soft pressing of the grapes at very low temperatures. Static cold pre-fermentation clarification, yeast inoculation into the clear must, alcoholic fermentation at 11°C in stainless steel tanks, aging on the yeasts for 2-3 months.

Sensory Characteristics: straw yellow color with golden reflections, intense and persistent, fruity aroma, with hints of ripe yellow pulp fruit. Fresh, ready to drink, pleasant, harmonious and persistent.

Food pairings: excellent with starters and fish soups, soft cheeses, pasta with light sauces.
