Grape variety: Manual harvest of the grapes in boxes with careful selection of Pecorino - Fiano - Grillo
Production Area: Abruzzo, Basilicata and Sicily
Vinification: The grapes are harvested by hand when perfectly ripe and vinified separately to best respect the peculiarities of the individual characteristic varieties. After a light and gentle pressing, the grapes undergo cold maceration for 12 hours. The musts are decanted cold; the Pecorino ferments in large 50hl untoasted barrels, the Fiano and Grillo ferment in stainless steel, at temperatures between 10/12 C.
Idea of Wine: Edizione Bianco was born from the idea that to make a great white wine you need two key ingredients: what nature makes available and an exceptional winemaker. Our chief winemaker Dennis Verdecchia, after years of experimentation, has managed to create a great white, the perfect expression of the native vines of southern Italy.
Sensory Characteristics: It offers a complex bouquet with exotic and captivating fruity notes of mango, papaya, lime and red grapefruit combined with hints of aromatic herbs such as lemongrass, lemon balm, mint and green tea. A long-lasting white, rich in nuances.
Food pairings: it lends itself perfectly to pairings with fried or baked fish, and is excellent paired with seafood appetizers, and tastefully enhances white meat dishes.
