ZABU VINEYARDS IL PASSO NERELLO MASCALESE SICILIAN LANDS FANTINI WINES
Grape variety: Nerello Mascalese
Production Area: Municipality of Sambuca di Sicilia. Winemaking: low production yield (around 70 quintals/ha). When the bunches reach maturity, the shoots are cut 10 cm before the bunch itself and the natural drying process begins thanks to the warm Sicilian sun and the sirocco wind coming from Africa. When a 15-20% reduction in weight has been achieved, the grapes are harvested, pressed and fermentation begins in contact with the skins. After a very long maceration the wine is decanted into barriques where it rests for approximately 6 months.
Sensory Characteristics: ruby red colour, bright, full and intense. On the nose it expresses intense sensations of red fruit, spices and red flowers. On the palate it is warm, full, soft and balanced, with hints of red fruits; along the finale.
Gastronomic pairings: it is the ideal ally for combining all the tasty dishes of the regional culinary tradition. It also pairs perfectly with mature cheeses, grilled meats, roasts, red meats in general, wild mushrooms and game dishes.
