Grape variety: Susumaniello
Production Area: Province of Brindisi, Puglia.
Vinification: Destemming and pressing of the grapes, maceration at a controlled temperature for 8-10 days with regular pumping over. Drainage and milk fermentation in stainless steel tanks. Aging in American and French oak barriques for the following 6 months.
Sensory Characteristics: Very intense ruby red colour, clear, elegant, ethereal and complex notes of black cherry and plum in brandy, blackcurrant and blackberry jam, hints of juniper, nutmeg, liquorice, cinnamon. A full-bodied wine, rich in velvety tannins, persistent and pleasant aftertaste.
Food pairings: Requires structured dishes such as pappardelle with ragù, grilled or roast meat. Excellent pairing with mature cheeses
