SALENTO VINEYARDS ZOLLA PRIMITIVE DI MANDURIA RISERVA FANTINI WINES
Grape variety: Primitivo di Manduria
Production Area: Manduria & Sava, Puglia Winemaking: Destemming and soft pressing of partially overripe grapes.
Maceration at a controlled temperature of 24-25ºC for 12-14 days with periodic pumping over. Racking and malolactic fermentation in stainless steel tanks. Aging in second passage French and American oak barrels for 12 months and aging in cement for the following 12 months.
Sensory Characteristics: Ruby red color with violet reflections. It offers a complex bouquet with notes of cherry jam, blackberries, currants combined with hints of spices. A full-bodied wine, soft and rich in fine tannins, with notes of cocoa, coffee and vanilla at the end, long persistence in the aftertaste.
Food pairings: excellent with robust first courses and lamb, excellent with game with elaborate sauces, mature cheeses.
