Grape variety: Sangiovese 90%, Canaiolo 10%
Production Area: Tuscany Winemaking: pressing of the grapes and maceration on the skins for 1-2 weeks favor a good extraction of polyphenols. Alcoholic fermentation takes place at a controlled temperature in steel tanks for approximately 25 days. The wine matures in steel tanks for 7 months and remains in the bottle for at least 2 months before being released on the market.
Sensory Characteristics: Bright ruby red in color, this Chianti DOCG displays well-integrated aromas of red cherries, tobacco, bronzed earth, and a hint of cedar spice. On the palate, the firm structure and refreshing acidity make it a very versatile cooking wine.
Food pairings: excellent with rich dishes such as traditional Tuscan specialties: pasta with Chianina ragù, white bean soup and fish soups.
