SARAGAT ATZEI ARU MONICA ISLAND OF NURAGHI FANTINI WINES
Variety: Monica 85% Carignano 15%
Red
Production area: Mid-hill vineyards in the area surrounding Mogoro.
Vinification: Fermentation and maceration for 15 days in horizontal steel tanks at a temperature of 22°C. Use of the delestage technique which consists in emptying the tank where the crushed grapes (must+marc) was placed only of the liquid part, allowing the cap of marc to settle on the bottom, and then filling it again. This up and down causes the cap to break, slightly pressing, and therefore better extraction. Aging in French oak barriques for 6 months.
Sensory characteristics: Intense, impenetrable ruby red. Aromas of black berries and plum with notes of vanilla and cocoa and a Mediterranean scrub finish. In the mouth it reveals its great structure and its great extract to end in a powerful and persistent sip.
Food pairings: Structured and spicy dishes, seasoned first courses based on pork and sheep meat, and game risottos, meat second courses, excellent with mature sheep and cow's cheeses.
